蟹皇海鲜羹 Braised Seafood Soup with Crab Roe

【材料】
A:蟹肉120克、虾粒120克、鱼粒120克、带子粒120克
B:蟹黄 40克、蛋黄 1粒
C:上汤1.5公升、风车粉100克
【调味料】
绍兴酒少许、盐15克、鸡精粉 10克
【做法】
1. 将材料 A 用沸水川烫,滤干备用。(图1)
2. 将上汤倒入锅用大火煮沸后,加入材料A和调味料煮开。(图2)
3. 风车粉加水稀释,加进汤里慢慢勾芡,最后加入材料B拌匀就可以上桌。(图3-4)

【Ingredients】
A: 120g crab meat, 120g diced prawn meat, 120g diced fish fillet, 120g diced fresh scallop
B: 40g crab roe, 1 egg yolk
C: 1.5liter premium stock, 100g premium tapioca flour
【Seasoning】
some Chinese cooking wine, 15g salt, 10g chicken powder
【Method】
1. Blanch all ingredients A in boiling water and drain. (pic 1)
2. Bring chicken stock to boil, add in ingredients A and seasoning. (pic 2)
3. Mix tapioca flour with some water, then slowly add into soup to thicken; and then add in all ingredients
B and dish out. (pic 3-4)
